Turnip or white turnip is a root vegetable grown in temperate climates worldwide for its white, fleshy taproot. The word turnip is a compound of turning on a lathe and neep and is derived from the Latin napus, the word for plant.


 

"Turnips & Peas" RECIPE exclusively by Chef Raj:


Ingredients:

Turnips - 3 (in big size)

Shelled Peas - 1/2 bowl

Onion - 1 (chopped)

Tomato - 1 (chopped)

Green chilli - 1 small (chopped) (only use if you like spicy or change according to your spice level)

Spices:

Chilli powder - 1/2 tsp (only use if you like spicy or change according to your spice level)

Cayenne pepper powder - 1/4 tsp (only use if you like spicy or change according to your spice level)

Black pepper - 1/2 tsp (only use if you like spicy or change according to your spice level)

Cumin or Ground cumin powder - 1/2 tsp

Coriander or Ground coriander powder - 1/2 tsp

Salt as per taste

Jaggery or sugar - 1/2 tsp (optional - if you can't have sugar, you can avoid it)

Ginger - 1/2 inch (1 1/4 teaspoon)

Garlic - 2 or 3 cloves

Oil - 2-3 tbsp

Fresh cilantro - chopped (for dressing)



VESSELS TO COOK - A Pressure Cooker is preferred for steaming the turnips, and a pan is for making the base


METHOD:

Step 1: Cut the turnips into small bite-size pieces.


Step 2: Take the pressure cooker, add these turnip pieces with little water (about 1 1/2 cups) and let it cook for 4-5 whistles or time it for about 15 minutes. Once the steam of the pressure cooker settles, open and mash the turnips. Keep it aside


Step 3: Take a pan, add oil, fry onion and one green chilli (if you don't like it spicy, you can avoid the chilli) for 3-4 minutes on medium flame.


Step 4: Add ginger and garlic and fry for another 1-2 minutes on a low-medium flame.


Step 5: Add spices (chilli powder, cayenne pepper powder, black pepper, cumin powder, and coriander powder.


Step 6: Add diced tomatoes and salt (according to taste).


Step 7: Add peas to the pan and fry for 3-4 minutes.


Step 8: Add the mashed turnips and fry this mixture until all the water from the turnips is dissolved.


Step 9: Add sugar (optional) and fresh cilantro chopped for dressing.


Step 10: Ready to eat with fresh rice, naan, chapati, bread or dinner roll.
